Wecipe Wednesday: Bran Muffins

Como say whattt?!

You are posting something as lame and mundane as a recipe?!

yep.

I only aim to please my faithful readers and I promise this recipe is worth making and eating again and again.  Unless my guests are outright (albeit polite) liars...these are a crowd pleaser and with five cups of bran flakes...they are probably at least somewhat edifying in the healthy department.

who was kind enough pass this along a few weeks ago and I think I've made them no fewer than eight times since then...

These are great for babies with motor skills that still 'need improvement'...as Julia is able to get about 30% of a muffin her mouth while impressively dispersing the other 70% equally between her lap rolls and forearm crevices:
 so..without further justification...

the golden goods:

Bran Muffins 

5 cups bran flakes (or raisin bran)*
2 ½ cups flour
1 cup dried cranberries (if not using raisin bran)**
1 tsp. B. soda
½ cup sugar (or more to suit tastes)***
1 cup oil
2 eggs
2 cups buttermilk***

Bake at  PREHEATED oven @ 375 for 20 minutes in greased muffin tins.

Assemble all dry ingredients, then add wet ingredients, but don’t let sit too long or the batter gets soggy and affects the texture.

Depending how hot the oven bakes, you can preheat the oven to 400 sometimes, unless your oven is a hottie mchotterson and bakes extra hot.

*gross. .. but if you enjoy chewy raisins in your baked goods....go ahead

***I go wild and use brown sugar on occasion
****or you can just go the old one tablespoon of lemon juice or white vinegar per cup of milk and let sit for five minutes if you don't regularly purchase buttermilk like I don't


a note on the title: generally ... for some odd reason I think that if I talk to Julia like I have a speech impediment..she will better understand what I'm saying....(specifically with l's and r's)

and 
"want to go see Grandma?" I say, "want to go see Gwandma?"

  4. haha. Well I'm stoked to try these...I've been feeling the lack of bran in my life. Also, I LOVE how big the dance floor was at your wedding: priorities in order, etc.

  5. as you can imagine, clare does baby talk with nica. when i went to visit, i found myself adopting the baby talk as well. then i'd stop, turn to dan and say "oh hell, it's spreading!!!!" and he'd giggle. it's like a disease!
