two ingredient flourless pancakes

If you've been on Pinterest recently then odds are pretty high that you've already seen these. I wish I could take credit for their genius but I can't. I've been making them every morning for myself (the kids hate them but they also hate watching Downton Abbey so they can't be trusted) and will continue to make them until I'm sick of them. Then I'll rotate back to this muffin recipe until I get tire of it and then I'll come crawling back to the bancakes. 
Even my professional photographer couldn't make them look appetizing ... don't let that scare you because what you see is far inferior to what you get. Trust me, I'm a SAHM.

While I'm obviously finished dying through the 21-day sugar detox ... I'm still trying to stay away from starch and sugar. Of course, the baby begs for Pop-Tarts every single hour of every single day. I've held strong and not purchased the Costco box of tarts that is chanting and cheering and sweetly singing my name every time I slowly saunter by during my weekly trip. So far.

I won't pretend that these are a worthy substitute for fruity, sugary, starchy heavenly goodness -- but these totally fit the "I'm SO sick of eggs and smoothies and am in the mood for something pancakey" bill and are really healthy by my unholy standards.

Ingredients
1 egg (I use the Jumbo size hormone-infested variety and split the yolk with Sebastian because he loves scrambled eggs but I'm sure a medium or large fresh organic egg will be just fine)
1/2 of a banana
dash of vanilla (optional)

To make things easy on myself I mash the half of the banana as much as I can while it's still in the peel especially if it's on the greener side of not ripe.

Then mix them the dying fruit with the egg ...
mouth water.

keep mixing ...
until you have a lumpy batter.

And here's where you're just going to have to read and do without visual aides. I'll hold your hand if you're scared.

I grease the pan with coconut oil but you can use your standard oil greaser. You'll be fine. You can make one big cake but then you run the risk of a gooey middle so you should probably do as I do and make two medium cakes. I put a little bit of Smart Balance on top and eat them with the other half of the banana.

The banana presentation is not standard; I did that just for you.

I hope you try them tomorrow or tonight and I really hope you don't hate them.

  10. totally trying this tomorrow for the lil girl. she has an odd dislike for pancakes, so I'm hoping she might be converted with these. also, I really appreciate a flourless recipe that doesn't involve ingredients requiring a trip to whole foods. ;)

  12. Wow... am I the only sane one who thinks that looks scary! I'm just kidding. Well sort of. For some reason the mashed banana and raw egg situation has me hesitant. If anyone want to renew their love of eggs, buy some egg ramekins. I put a few diced tomatoes, some boursin cheese and an egg with s&p in the dish and bake it. It's pretty much the best thing ever...

  14. Also if you want to be CRAY and add a third ingredient, almond butter+egg+banana makes fora yummy pancake. They even passed the man test. Yes, Andrew liked them!

  16. Alright, as long as Ellen doesn't get up before 6 tomorrow, I will try this, because according to Ellen, we have lots of "banas" and "aggs".

  17. Just made and ate these for breakfast (don't worry I fasted for the election yesterday...I know you were judging). They were sooooo good, I put in vanilla and cinnamon, thereby doubling the ingredient list and I ate the WHOLE banana and TWO eggs because I'm a piggy like that. I never would have thought to make these, but I am in your debt forever.

  18. Um, Colleen stole my update. Like, every last bit of it. I too added vanilla and cinnamon (thinking I was SO CLEVER) and I too used 2 eggs and the whole banana. Will def make these again. I HAVE A WHOLE NEW LEASE ON BREAKFAST. (Not really, but thanks!)

  24. I've seen these before on a few healthy living blogs and was always totally grossed out. Egg and banana?! Wouldn't that just taste like bananas and scrambled eggs together? BUT... I trust you and if you say they're not bad, then maybe they aren't that bad. I'll just have to imagine they taste like banana pancakes... without flour.

  25. I've never tried it with just eggs and banana (I've added almond butter in the past), but I might have to try this since almond butter is incredibly expensive where I now live.

    1. P.S. Carbs have been calling my name too. Are the Nature's Path toaster pastries calling your name or regular Pop Tarts? I never cared for Pop Tarts growing up, but as an adult I've liked the ones from Nature's Path. Anyways. here's to resisting!

  31. Thanks for these! I've tried them twice since last Saturday (after all, we had two bananas), doing one banana/two eggs each time. Tasty! You're right about gooey middles if they're too big...I've most enjoyed what's probably 2-3 tablespoons of batter at a time. I'm not on Pinterest...I'm not crafty, and although I like to cook, I'm telling myself I don't need to spend more time dreaming about recipes than I already do! :)

I'm just seeing this so I'm not sure if you'll get the reply, but canned pumpkin or cooked sweet potato (without the skin) works well too, you just kinda have to play around with the ratios a bit and/or add a little almond flour or ground flaxseed to make it a little thicker. Hope that helps!
