But! I cannot blog a lie.
I had some serious help from Blue Apron (kind and generous post sponsor!) when it came to the recipe and the ingredients and the execution of the recipe ...
... and by serious help I mean they told me exactly what to do and sent the freshest of pre-portioned ingredients and held my hand via very detailed and illustrated instructions ...
... thankfully!
I know I blogged about Blue Apron previously but a quick refresher!
Blue Apron is a genius meal delivery service that delivers farm-fresh ingredients in a refrigerated box right to your doorstep.
There are two meal plans: the 2-person plan and the family plan (feeds a family of four hungry adults for $8.74 per person or $69.92 for an 8-serving delivery which consists of two hearty meals).
Shipping is always free and there is NO commitment! You can skip or cancel meals whenever you'd like.
Blue Apron is constantly adding new meals to their rotation (I'm dying to try their Chinese Five Spice Shrimp and White Pizza) so odds are high you'll never get bored and stay far and away from the dinner ruts we all get in from time to time. Each meal is 500-700 calories and takes no more than 40 minutes to prepare. To get a better idea of the variety you can browse their impressive list of recipes here.
It's great for pretty much anyone and it's been fun to hear about random people using it (shout out to my friend Colleen! And to some of the nurses and doctors Simon works with!) and enjoying it because ... it's awesome.
Simon's been working late a lot of nights this past month and has had to go the old cafeteria dinner route so it felt good to stretch my culinary muscles (however coddled they were, but we'll overlook that) and make something with a little bit more nutritional value than the blue plate hospital special.
The kids remembered our last Blue Apron delivery and were maybe a little too curious to inspect all of the ingredients ("so much green things!!" and "look! radishes like Peter Rabbit eats!") and Theo was particularly taken with the garlic ...
... he even went so far as to help himself to a generous spoonful of the freshly minced variety and I'm just sorry I didn't catch the moment in it's full and regrettable glory.
Back to the recipe at hand ... and "my" finished product ...

I've always been a little bit terrible at getting wild rice just right but Blue Apron set me straight and the rest of my wild rice ventures shouldn't be as tenuous from here on out.
We all devoured the meal and even though it's for a family of four and Sebastian + Phoebe both eat enough to feed a small army of hungry elephants there were still leftovers and leftovers might be my favorite love language these days.
Theo enjoyed copious amounts of rice with even more copious and thieved helpings of his very favorite food of all time: butter.
